Below are two tasty recipes that are great for lunch or dinner, and are easy to make.
Siciliana Salad
300 Calories, Serves 2
INGREDIENTS:
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1/3 cup crumbled goat cheese
- 1 bag organic arugula
- ½ cup fennel, thinly sliced
PREPARATION:
Mix all salad ingredients into a medium size bowl. Whisk lemon juice and olive oil together to make the dressing. Pour dressing over salad. Toss and serve.
Cafe Med Tuna Salad Wraps
225 Calories, Serves 1
INGREDIENTS:
- ½ tbsp. parsley
- ½ tsp olive oil
- ½ tbsp. lemon juice
- ½ tsp red onions, finely chopped
- 1 pinch black pepper
- ½ tbsp. Kalamata olives, chopped
- romaine lettuce
- ½ canned tuna
PREPARATION:
Mix all ingredients together in a bowl and then place evenly on top of the two romaine lettuce wraps.
