- 3 cups frozen cherries, thawed and patted dry

- 1 1/2 cups packed light brown sugar
- 3/4 cup apple cider vinegar
- 1/4 cup spiced rum
- One 8-ounce wheel of Brie cheese
- Sprigs of Rosemary, for garnish

- To prepare the chutney, combine cherries, shallot, brown sugar, and ACV in a small pot over medium heat until boiling. Reduce heat to medium-low; add rum. Cook, uncovered, for 1 hour.
